When Bossy camps she likes to get all Top Chef on her family’s ass. This particular night she made chicken cacciatore, by first sautéing (on a camp stove) onions and peppers and chicken, and then she added a can of whole tomatoes and some red wine and parsley and lemon rind — and then the whole thing went on the campfire until it was cooked down.
Also served was a salad with olive oil, balsamic vinegar, salt, pepper, and garlic bits — and garlic mashed potatoes, made on the camp stove with lots of half-and-half and cracked pepper.

July 28, 2010 at 10:49 amThat is one awesome camping meal. When you are at home, do you serve wienies and burgers cooked over a campfire??

July 28, 2010 at 10:58 am–>Impressive. I never order chicken cacciatore because I say it too fast and it comes out “kitchen cacciatore.” Then I can’t hold up the menu fast enough to hide my red cheeks.

July 28, 2010 at 12:40 pmThis looks amazing! You can be my camp chef anytime. We’re more of a hot dog and pasta salad from the grocery store kind of camping family.

July 28, 2010 at 4:57 pmPretty darned accomplished for camp cooking!
That Hell’s Kitchen guy would still probably diss you for not plating it up with things carefully piled on top of things, and lack of sprinkles around the edges (which in your camping environs could be construed as grass clippings.) But then, have we ever seen him (a) campfire cook or (b) cook?
